Super Easy AND Fresh Supper Idea From the Pantry

I really hate grocery shopping in the rain...(actually I really hate doing anything in the rain...except napping of course!) ...which is why it's always great to have some great dried pasta on hand.  Here's one of my go to rainy (lazy) night meals....



I had some Cesarecci dried pasta...some left over arugula or spinach...goat cheese..and a little parm.  Cook pasta (in SUPER SALTY WATER), drain, stir in spinach or arugula and goat cheese.  Toss with a simple balsamic vinaigrette (olive oil, balsamic vinegar, salt, and a Tablespoon dijon mustard)* and sprinkle with parmesan.  Season with fresh ground pepper.  There you have it...a healthy dinner on the table in no time at all!


*if you are really lazy (and its ok if you are) you can use a bottled vinaigrette
